Easy Weeknight Takeout, Without Leaving Your Home

Ingredients

  • 3 tablespoons of sesame oil
  • 3 large eggs
  • Kosher salt
  • 2 carrots diced up
  • 3 green onions sliced, divide white and green parts
  • 3 cloves of garlic, minced
  • 1 tablespoon of minced ginger
  • 4 cups of cooked long-grain rice
  • ¾ cups of frozen peas
  • 3 tablespoons of soy sauce

Step-By-Step

Heat a large cast-iron skillet over high heat. Let the skillet get very hot. Add 1 tablespoon of sesame oil. Beat eggs with 2 tablespoons of water and a pinch of salt. Add eggs to the skillet. Stir to form large curds and transfer to a plate and set aside. Add 2 tablespoons of sesame oil to the skillet and add carrots and the white parts of the green onions. Cook for about 2 minutes. Add garlic and ginger and stir to cook for about 1 minute. Add rice, peas, and cooked eggs to the skillet. Add soy sauce and stir until heated through for about 1 minute. Season to taste with salt and pepper and top with the remaining green onions. Enjoy!
